First, the earth is definitely not a sphere. It's an ellipsoid that bulges at the equator, and the southern equator bulges more. So having to get reaally accurate about the shape of the earth, you end up with a nasty looking mathematical model. The model used for virtually all maps these days is WGS84. Wonderful, except that the earth isn't exactly WGS84 shaped. So the actual ground doesn't line up. Just remember that unless you have one of the best GPS systems on the market, your current GPS might sometimes lead you astray.
